Birichino

105 year-old dry-farmed, own-rooted Grenache fermented with native yeast, aged in neutral French barrels, bottled unfiltered. If we have a signature wine, or if there is a wine which exemplifies the Birichino style, this is it. It is not dark in color. It does not at first glance, appear terribly formidable, or built for the long haul. The tannins are not immediately apparent. All of these initial impressions are some sense deceptive. The combination of old vines, low yields, use of the appassimento technique for a portion of the grapes, and some minimal yet very careful cellar work can produce the perfumed, prismatic, subtly grippy and distinctive style of wine we love.
