Three restaurant industry lifers with almost 50 years cumulative experience in bartending, management, food preparation and service bring their palates to bear producing wine that is simple, untamed and ferocious. In 2014, the boys formed an LLC and scraped together enough money to start making wine. We’re calling it ‘Savage’ because ‘three refined gentlemen with impeccable manners and good taste’ was too long. But also because the root of the word savage, from the Anglo-French ‘Sauvage’, describes the wild and untamed. It is a particularly suitable description for Sauvignon Blanc, which left unchecked gorges itself on fertile soil and quickly develops an uncontrollable canopy.
